meal-in-a-pumpkin

This has been a Tenney Halloween tradition for years! You will need the following ingredients:

1 medium-small pumpkin
2 tbsp. olive oil
1 large yellow onion; chopped
2 cloves fresh garlic; crushed
1 tbsp. dried parsley
1 pkg. fresh mushrooms; sliced
1-2 lbs. lean ground beef
2 tbsp. soy sauce
3 tbsp. brown sugar
2 cans (reduced fat) cream of mushroom soup
2-3 cups white rice; cooked

Cut off pumpkin top and clean out. Use a felt pen to draw a silly/scary face on pumpkin. Sautee onions, garlic and parsley in olive oil. Add meat and brown. Drain, add mushrooms and cook 5 minutes. Add soy sauce, brown sugar and soup. Simmer, add rice and simmer 5 minutes more. Pour mixture into pumpkin and replace top. Bake in the oven for 1 hour at 350 degrees on a baking sheet. Salt/pepper to taste.
